Cheesy- bacon zucchini hasselback




Forgo the potatoes and have this hasselback with zucchini. 
     1 serving 
1 medium size fresh zucchini = 3 greens / 6 oz.  ( I used the vegetable conversion chart to help me)  
Slice 3/4 way through 
1 sliced of low fat cheese / 1 slice is 1 oz = 1/4 lean
1 slice turkey bacon = 1/8 lean/ chopped and cooked before putting on top.

Cut zucchini 3/4 way through, cut cheese in bite size pieces to put in between each zucchini opening 
Top with cooked turkey bacon pieces. 
I also sprinkled just a little garlic powder

bake at 350 for about 20 minutes or till the zucchini is just ala dente. also all depends on the size of your zucchini.

3 greens 
3/8 lean
1/4 condiment  

This  is with turkey pepperoni and provolone cheese. 
       7 slices of turkey pepperoni = 1/8 protein 
        1 provolone cheese slice is 1 oz. = 1/4 lean
