Zucchini, Onion and Egg Frittata




Makes 1 serving 
Provides: 
1 lean 
3 green 
3 condiments 
 
3 eggs 
2 tablespoons reduced-fat parmesan cheese
1 tablespoon parsley 
1 garlic clove 
1/8 teaspoon salt 
1/8 teaspoon pepper 
1 cup thinly sliced zucchini 
½ cup scallions
 


mix all together and bake for 25 minutes @ 350 in a non stick sprayed casserole dish. Great for a breakfast lean and green meal.
